This FAO report reviews global evidence showing that repurposing fiscal policies—such as taxing unhealthy foods and subsidizing nutritious options—can improve diet quality, reduce non-communicable diseases, and make healthy diets more affordable, while highlighting gaps in implementation, especially in low- and middle-income countries.
